How Judging Works
All wines and spirits are assessed through blind tasting, meaning Judges do not know the identity, brand, or origin of the product they are evaluating. This removes bias and ensures each entry is judged solely on its merit. Judging panels are organized by category and typically consist of 3–5 experts. Each panel collaborates to discuss and score entries, combining individual impressions with group consensus. Products are evaluated using a structured scoring system that considers:

From refined liqueurs and brandies to expertly crafted schnapps, vodka, and whisky, our judges seek to understand not only the spirit itself, but also the artistry and dedication behind its production. Each entry reflects passion, heritage, and the pursuit of excellence in distillation. With an exceptional range of spirits represented, CCIVS showcases the very best from around the world. Distinguished brandies—including celebrated expressions such as Armagnac and Cognac from France—highlight a tradition dating back to the 12th century.
Today, brandy continues to evolve, offering a diverse spectrum of styles and national interpretations to the global trade audience. While Scotland remains the historic home of whisky, outstanding whiskies are now produced across the globe. At CCIVS, both established houses and emerging distilleries present remarkable expressions that challenge and delight even the most seasoned connoisseurs. Gin, a timeless classic, is experiencing a global renaissance. From traditional London Dry to innovative craft interpretations, gin continues to captivate both producers and consumers alike. Vodka producers combine generations of expertise with modern innovation to create exceptionally pure and refined spirits. Alongside renowned brands, a new wave of distillers is redefining vodka through unique flavour infusions and cutting-edge techniques, expanding the category’s global appeal. Schnapps, including traditional styles such as Korn, Doppelkorn, and Kornbrand, represents a long-standing heritage of craftsmanship. Leading producers bring their finest expressions to CCIVS, offering a true taste of tradition and purity. Liqueurs, fruit brandies, and grape marc spirits further enrich the category, delivering a wide spectrum of flavours—from delicately sweet to intensely aromatic— crafted through the distillation of fermented fruits and botanicals. Tequila, originating from Mexico, is crafted exclusively from the blue agave plant. It is categorized into several styles, including Blanco (unaged and vibrant), Reposado (aged in oak for added smoothness), Añejo (rich and complex, aged longer), and Extra Añejo (ultra-premium, extensively aged). The production process begins with harvesting the agave, followed by cooking, crushing to extract juices, fermentation, distillation, and often maturation in oak barrels to develop depth and character.
CCIVS is also proud to feature a dedicated category for Mezcal, another agave-based spirit known for its distinctive and often smoky profile. Mezcal is produced by roasting agave hearts (piñas) in underground pits, which imparts its signature flavour. The cooked agave is then crushed, fermented naturally, and distilled—often using traditional methods—resulting in a spirit that reflects both terroir and artisanal craftsmanship. Beyond tequila and mezcal, the global spirits portfolio includes unique expressions such as Asian arrack and Greek ouzo, further enriching the international diversity presented to our judges. Increasingly, producers are also embracing organic and sustainable practices, creating spirits from natural raw materials as part of a growing commitment to environmental responsibility. Fermentation: Raw materials are processed—pressed or malted—to produce mash or juice. Yeast is then introduced, converting sugars into alcohol through fermentation.
Distillation: The fermented liquid is distilled to separate alcohol from water and other components. Through multiple distillation stages, impurities such as fusel oils are removed, resulting in a refined spirit that can reach high levels of purity and alcohol concentration.
Maturation: Many spirits are aged in wooden barrels, often toasted on the inside. This process enhances aroma, flavour, and colour, creating depth and complexity. Maturation periods vary widely, from months to decades, depending on the desired style.
Filtration and Dilution: The spirit is then filtered to ensure clarity and stability, before being diluted to the desired alcohol level for bottling. While these stages provide a general framework, production methods vary widely. Each distiller brings their own expertise, innovation, and creativity, resulting in the remarkable diversity of flavours, aromas, and styles found in the world of spirits today.
